7-Minute Frosting
3 Large Egg Whites
1 1/2 C. Sugar
1/2 tsp. Cream of Tarter
1/3 C. Water
1 TBS. Light Corn Syrup
1 1/2 tsp. Vanilla
Use a Double Broiler. If you don't have a double broiler, a sauce pan and glass mixing bowl works great.
- Fill bottom of pan with 1 inch of water. Bring to boil.
- Reduce heat to simmer.
- Add eggs, sugar, cream of tarter, and water in glass bowl (or top of broiler). Put on top of pan. Stir constantly until well mixed.
- Cook for 1 minute covered.
- Remove lid and stir. Using a pastry brush, brush side of pan with water to prevent crystals.
- Cover and heat for 30 seconds.
- With mixer, beat the mixture for 7 minutes until thick and fluffy.
- Keep on the heat. Add corn syrup and vanilla. Beat for 2 more minutes.
- Remove from heat and beat until frosting cools and becomes very thick.
- If still too soft, put in fridge for 30 minutes then beat again.
