7-Minute Frosting

This is the frosting Mamma puts on her Easter cake then tops with green coconut and jellybeans.  YUMMM!


7-Minute Frosting

3 Large Egg Whites
1 1/2 C. Sugar
1/2 tsp. Cream of Tarter
1/3 C. Water
1 TBS. Light Corn Syrup
1 1/2 tsp. Vanilla

Use a Double Broiler.  If you don't have a double broiler, a sauce pan and glass mixing bowl works great.

  1. Fill bottom of pan with 1 inch of water.  Bring to boil.
  2. Reduce heat to simmer.
  3. Add eggs, sugar, cream of tarter, and water in glass bowl (or top of broiler).  Put on top of pan.  Stir constantly until well mixed.
  4. Cook for 1 minute covered.
  5. Remove lid and stir.  Using a pastry brush, brush side of pan with water to prevent crystals.
  6. Cover and heat for 30 seconds.
  7. With mixer, beat the mixture for 7 minutes until thick and fluffy.
  8. Keep on the heat.  Add corn syrup and vanilla.  Beat for 2 more minutes.
  9. Remove from heat and beat until frosting cools and becomes very thick.
  10. If still too soft, put in fridge for 30 minutes then beat again.
